MADISON, Wis. — Wednesday was milk, cottage cheese, yogurt and sour cream day at the World Dairy Expo Championship Dairy Product Contest at Madison College.
Judging for those Grade A dairy products was held Wednesday. The three-day expo started in 2003 and is the only one in the world that features a full array of dairy products.
This year, there were 1,560 entries across 94 categories.
“We have 54 judges coming in from all over North America, and they are the top sensory evaluators in their field,” said Brad Legreid, the executive director of the Wisconsin Dairy Products Association. “The nuances they can pick up in their palate, immediately little things — whether it’s just an off flavor or just a texture being a little different.”
Judging for cheese and butter was held Tuesday, and Thursday will be ice cream and whey judging.
Although there are fewer farms than there were 30 years ago, the state is actually producing more milk and dairy products than ever before.
